Ingredients

  • Frozen shredded hashbrowns (between 26-32 oz) - no need to thaw
  • 10.5 oz can cream of chicken
  • 8 oz bag of shredded cheese (I use Colby Jack)
  • 12 oz pack of bacon, cooked (I only use half the pack)
  • 1/2 cup of melted butter (1 stick)
  • Salt, pepper, paprika, garlic powder, and onion powder to taste
  • Optional: onions and peppers

How to Make It

  1. Preheat oven to 350. Spray, butter, or grease a 9x13 casserole dish.
  2. Crumble up cooked bacon. Mix cream of chicken, hashbrowns, melted butter, half the bag of cheese, and half of the crumbled bacon in one bowl.
  3. Pour mixture into prepared pan and top with remaining cheese and bacon.
  4. Bake for about 45 minutes until bubbly and golden. I like to broil it on low for just a couple minutes after it's done cooking to ensure a crispy topping.
  5. Remove from oven and let cool for 5-10 minutes. Tastes great reheated!

Tips

  • Can be made ahead and frozen. 
  • For perfectly cooked bacon, bake in the oven for 15-20 minutes at 375.
  • If you can, shred block cheese yourself for better melting. 
  • If you don't like bacon, try sausage or ham instead!

Storage & Reheating

  • Refrigerate for up to 4 days.
  • Reheat in oven or microwave.
  • Can be frozen for 1-2 months if wrapped well!
